This and that. Dinner menu: Baked burritos 1 lb ground chicken 1 package Old El Paso burrito mix (not the taco mix, actual burrito mix is better) 1 16oz can refried beans 1 16 oz bottle of salsa (thicker is better) 1 package 8 flour tortillas, burrito sized (width approx. 8-9") 1 package shredded cheese (monterey jack) Preheat oven to 375. Brown chicken. Toss in burrito mix and 1.25 cup of water. Empty cans of beans and salsa. Mix well and simmer for 5-10 min. Scoop a mixture into tortilla shells and line in a casserole pan (8x10" or 9x11" pans work well). Spread remaining mixture on top and sprinkle cheese on. Put in oven ~15 min for cheeese to melt.Eat, refridge, reheat, eat some more. Generally makes 4-5 decent sized meals. Pot of Tea Blueberry tea with ginger root. Ginger root makes great tea. Just buy a root and slice off thin pieces, steep in hot water. It especially goes well with blueberry or green tea. I got in the mail the renewal form for one of the charities I support. Check out <a href="http://www.eff.org">Electronic Freedom Foundation</a>. They do some great work defending online rights and freedoms. It seems likely <a href="http://www.deanforamerica.com">Dean</a> will be dropping his presidential nomination bid. It saddens me, though I've heard some rumbling that he may transform his campaign and the grassroots support it has generated. Sometimes I feel disillusioned by democracy. This is one of those times.
