Chocolate MUD cake
300g dark chocolate, chopped
250g butter, chopped
1 tablespoon instant coffe powder
3/180 ml water
150g firmly packed brown sugar
100g plaiun flour
35g self raising flour
25g cocoa powder
2 eggs, lightly beaten
60 ml Tia Maria / Kahlua
Grease a deep 22 cm round cake pan, line base and side with baking paper.
over low heat until chocolate is molten. Sift flours and cocoa powder into
large bowl; whisk in the chocolate mixture, egss and liqueur. Pour mixture
into prepared pan.
Bake in moderately slow oven for 1h 15 mins. Coll cake in pan; cover,
refrigerate overnight.
Remove cake from pan then, if desired, dust with equal parts icing sugar and
cocoa, sifted together.
